The types of wine produced in El Condado under the B.O. are as follows:
White wines
Condado Joven (Young Condado): from the Zalema variety of grape, which is harvested early. These are young, unaged white wines obtained by fermentation at a
controlled temperature. They have an acquired alcohol content of between 10% vol. and 12% vol.
Condado Blanco (Condado White): these are traditionally-made unaged wines. They have an acquired alcohol content of between 10% vol. and 14.5% vol.
Condado Tradicional (Traditional Condado): these are Condado Blanco wines which have undergone a one-year traditional ageing process.
Generous wines
Condado Pálido (Pale Condado): a generous wine of the fine and dry type (known in other D.O.'s as a fine wine) aged biologically under a velum of flor yeast in
oak “botas” and “bocoyes”*, for at least 3 years. It is made from the grape varieties Listán de Huelva, Palomino and Garrido Fino. It has an alcohol content of
between 15º and 17º.
Condado Viejo (Old Condado): an oloroso generous wine, made with grape varieties Zalema, Listán de Huelva, Palomino and Garrido Fino. They are aged for a minimum
of three years, although those which are marketed undergo over five years of ageing in the presence of oxygen (in oak “botas”*). They have an alcohol content of
between 15º and 22º.
Licorous generous wines
Condado de Licor (Locorous Condado) or Generoso de Licor (Licorous Generous): a medium sweet wine (with a higher concentration of sugars) made from generous
wines. Aged in oak for at least 2 years and with an acquired alcohol content of between 15 and 22%. They are marketed as ‘pale dry’, ‘medium’, ‘cream’ and ‘pale
cream’.
Also produced in El Condado are mostos (unfermented grape juice), red wines, cavas (sparkling wines), liquors and cognacs.
* "Botas" and "bocoyes" are large wooden barrels in which wine ages. The difference between them is that a "bota" holds 550 litres and is made of American oak, while
a "bocoy" can hold up to 650 litres and is made of Spanish oak and chestnut wood, although sometimes American oak is used as well.
El Condado is also a big wine vinegar producer, with its own “Condado de Huelva Wine Vinegar” Brand of Origin (one of only three in the whole of the European
Union; the other two belong to Módena and to Jerez).

Wine vinegar is the result of acetic fermentation of wine – in this case, of wine produced under the Condado de Huelva Designation of Origin. It's a unique product
with a great tradition in the area; there are even documented signs that it was being exported to countries such as Russia and England as early as the 18th century.
There are two types of wine vinegar produced in the region:
Condado de Huelva Wine Vinegar: made with D.O. wine. Condado de Huelva in fermenters, with a residual alcohol content not over 0.5% vol. and maximum total
acidity of 70 g/l.
Viejo Condado de Huelva (Old Condado de Huelva) Wine Vinegar: enriched with Condado Viejo (Old Condado) wine and with a residual alcohol content not over
3%. This wine vinegar is aged in oak “botas” or “bocoyes”*. It comes in three kinds:
Solera: wine vinegar aged on the oak butt and solera system for more than six months and less than a year.
Reserve: wine vinegar aged on the oak butt and solera system for more than a year.
Vintage: wine vinegar aged on the vintage system for more than three years.
